Breakfast Apple LoafKristy Vike-Manthe, Stoughton 3
cups flour
1/3 cup orange juice 1
3/4 cups sugar
5 large apples peeled & sliced 1
cup oil
4
eggs
2 teaspoons cinnamon 1
tablespoon baking powder
1 teaspoon nutmeg Chopped
walnuts (optional) Preheat
oven to 350°. Place the flour, 1
2/3 cups sugar, oil, eggs, baking powder and orange juice in a bowl and mix well
by hand. Mix together the apples,
spices and remaining 1/4 cup sugar. Place
half of the batter in a wax paper lined 10” tube pan and top with apple mix.
Repeat with the remaining batter and apple mix.
The walnuts if you are using them may be added on top of the apple mix.
Bake 1 hour. Icing: 1
cup powdered sugar 1/2
teaspoon vanilla After
